Ackee & Saltfish (Palm heart)
Real Results From Real People
Soft ackee. Flaky palm heart. One forkful.
Tender ackee folds through flaky, brined palm heart with scallion, thyme, peppers and a restrained taste of the sea. White quinoa, savory callaloo and caramelized sweet plantain complete the plate around it.
Ackee + Flaked Palm Heart Together
Ackee stays ackee.
Ackee brings its own soft, buttery texture to the meal. It is folded through the aromatic base with enough care for the yellow pieces to remain visible, tender and distinct in the final forkful.
The texture stays soft enough to break under the fork while still arriving as recognizable pieces throughout the meal.
Intact Ackee Beside Palm-Heart Flakes
Palm heart carries the saltfish role.
Hearts of palm are prepared in irregular flakes and shreds, then seasoned for salt, brine and a restrained marine character. Their lightly fibrous bite gives the softer ackee something distinct to meet in every forkful.
A restrained touch of nori or kelp can deepen the saltfish character while keeping the flavor centered on ackee, aromatics and the finished plate rather than on seaweed itself.
Ackee brings tenderness. Palm heart brings structure. The contrast gives the center of the meal its bite.
The aromatics frame the ackee.
Scallion and thyme carry the aromatic center, while tomato, pepper, garlic and restrained Scotch bonnet build warmth around the ackee.

The next bite changes depending on where the fork goes.
Quinoa, callaloo and sweet plantain remain distinct enough to change the character of the main dish from one forkful to the next.
A lightly seasoned base that receives the thyme, scallion and savory juices while leaving the ackee at the center of the meal.
Tender callaloo remains its own component, bringing deep vegetal flavor beside the softer ackee and palm heart.
Ripe plantain gives the salty, savory center of the plate a naturally sweet counterpoint before the fork returns to the main dish.
Before you add it to the week
The second heat should protect the ackee.
The ackee should warm through while staying visibly intact. The palm heart should keep its flaky bite, the quinoa should loosen, the callaloo should stay tender and the plantain should return soft and caramelized.
Final tray layout, heating time and handling instructions should preserve the meal’s textures with minimal agitation after heating.
