Coconut Curry Lentils
Real Results From Real People
Coconut curry that clings. Wild rice that keeps its bite.
The first forkful lands warm and rounded. Coconut milk carries fresh ginger, garlic, thyme, curry spice and the fruity warmth of Scotch bonnet through lentils cooked two different ways. Red lentils soften into the sauce. Green or brown lentils stay whole enough to bite. Wild rice brings a darker, nutty chew underneath, while lime clears the richness before the next forkful begins.
Macro Curry + Lentils + Wild Rice
What happens in one forkful
The curry reaches the palate smooth and full, carrying the spice with it.
Ginger, garlic, scallion, thyme and pimento begin separating from the coconut.
Whole lentils and wild rice keep the bite moving after the sauce has softened everything around them.
Acidity clears the richness while Scotch bonnet leaves controlled warmth behind.
They soften until part of them disappears into the coconut sauce, naturally giving the curry more body.
They stay recognizable, leaving individual bites throughout the meal.
And underneath, something still pushes back.
Wild rice stays distinct beneath the sauce, bringing earthy grain flavor and enough resistance to break up the creaminess. It is there because the meal needs it, not because the label does.

How the curry is built
Onion, scallion, fresh garlic, ginger and thyme create the aromatic base. Turmeric, coriander, cumin, fenugreek, pimento and black pepper deepen it underneath.
Coconut milk, red lentils, tomato and vegetable stock create the sauce's thickness and rounded mouthfeel.
Carrot adds sweetness and bite. Red pepper softens into the sauce. Spinach folds through without turning the dish into a vegetable medley.
Used for fruity warmth rather than heat that overwhelms the curry.
Acidity lifts the sauce so the coconut does not linger too heavily on the palate.
Before you add it to the week
What gives the meal its structure
Build the plant-protein and fiber foundation while helping create the curry's body.
Brings grain substance and the chew that prevents the meal from becoming uniformly soft.
Carrot, pepper and spinach are cooked directly into the curry rather than treated as separate obligations.
Carries the spice and provides the rounded richness that defines the sauce.
Made for the second heat.
Prepared food has another test after it leaves the kitchen: it has to become itself again. Here, the curry loosens back around the lentils, the grain absorbs some of the sauce without disappearing into it, and wild rice keeps enough chew to remain distinct. Nothing in the dish depends on crunch, fragile garnish or a texture that cannot survive reheating.
